Method
 

Step-by-Step Instructions
  1. Chop fresh rhubarb into small pieces, toss with sugar, and let rest for 10 minutes.
  2. Whisk together flour, baking powder, salt, cinnamon, and nutmeg in a separate bowl.
  3. In another bowl, beat the egg, then mix in milk and vanilla until smooth.
  4. Fold the wet mixture into the dry ingredients, then gently add the sugared rhubarb.
  5. Heat oil in a skillet or deep fryer to 350°F (175°C).
  6. Drop heaping tablespoons of batter into hot oil and fry for about 2 minutes on each side.
  7. Remove fritters when golden brown and drain on paper towels. Drizzle with glaze while warm.
