For the Salad
  • 2 cups Kale fresh, tender leaves
  • 1 can White Beans drained
  • 2 tbsp Lemon Juice freshly squeezed
  • 1 tbsp Olive Oil extra virgin recommended
  • to taste Salt
  • to taste Pepper
For the Toast
  • 2 slices Bread your choice, gluten-free if needed
  • 1 medium Avocado ripe

Method
 

Preparation
  1. Tear fresh kale leaves into bite-sized pieces, remove tough stems. Add white beans, lemon juice, olive oil, salt, and pepper. Toss to coat and marinate for about 5 minutes.
  2. Preheat toaster/oven to 400°F (200°C). Slice bread, toast until golden brown, about 5-7 minutes.
  3. Cut avocado in half, remove pit, and scoop the flesh into a bowl. Mash with fork, adding salt and lemon juice.
  4. Spread the mashed avocado over toasted bread. Top with marinated kale salad.
  5. Serve immediately for the best texture and flavor. Optionally garnish with lemon zest or chili flakes.
