Method
 

Preparation Steps
  1. Preheat your oven to 400°F (200°C).
  2. Peel and dice the sweet potatoes into uniform 1-inch cubes. Toss with olive oil, paprika, garlic powder, cinnamon, salt, and pepper. Spread on a baking sheet and roast for 40-45 minutes, stirring halfway through.
  3. Heat a skillet over medium heat and add a drizzle of olive oil. Sauté the diced yellow onion for 4-5 minutes until translucent.
  4. Add the ground beef and taco seasoning to the skillet, breaking apart as it cooks for 6-8 minutes until browned.
  5. Assemble the bowls starting with roasted sweet potatoes, topped with ground beef mixture, avocado slices, and cottage cheese.
  6. Drizzle hot honey over the top and serve immediately.
