- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together the granulated sugar, lime zest, and salt until combined. Then add melted unsalted butter, fresh lime juice, vanilla extract, and eggs. Blend until smooth.
- In another bowl, mix all-purpose flour and baking powder together. Gradually add this to the wet mixture, stirring gently until just combined.
- Add green food coloring, stirring until you reach your desired hue. Cover the dough and chill in the refrigerator for at least 4 hours.
- Roll tablespoon-sized portions of dough into balls, coat them in powdered sugar.
- Place dough balls on the baking sheet spaced 2 inches apart and bake for 10 minutes.
- Immediately after baking, press a heart-shaped candy into the center of each cookie.
- Cool cookies on the baking sheet for 5 minutes before transferring to a wire rack.
