- Blend the Sauce: In a blender, combine fresh dill, chives, cilantro, shallot, olive oil, lemon juice, cottage cheese, Greek yogurt, salt, and pepper. Add a splash of reserved pasta water and blend on high until smooth and creamy, about 30-60 seconds. Adjust seasoning as needed.
- Combine Sauce and Pasta: In a large skillet over low heat, add the blended sauce to the drained pasta. Toss together until fully coated, cooking for 2-3 minutes. If the sauce is too thick, stir in more reserved pasta water as needed.
