  • 3 cups Cooked Chicken shredded, rotisserie chicken preferred
  • 2 cups Spinach fresh or frozen
  • 8 oz Cream Cheese softened
  • 2 cups Mozzarella Cheese shredded
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • Salt and Pepper to taste
For the Topping
  • 1 cup Breadcrumbs can substitute with crushed crackers
  • 2 tbsp Olive Oil or Butter for drizzling

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the shredded cooked chicken, soft cream cheese, and fresh spinach. Add half of the mozzarella cheese and season with garlic powder, onion powder, salt, and pepper to taste. Stir well until fully incorporated.
  3. Grease a 9x13-inch casserole dish. Pour the chicken and spinach mixture into the dish, spreading it evenly.
  4. Sprinkle the remaining mozzarella cheese evenly over the top. Then, add breadcrumbs and drizzle olive oil or melted butter over the breadcrumbs.
  5. Bake for 25-30 minutes until the top is golden brown and the cheese is bubbling.
  6. Let the casserole cool for 5 minutes before serving. Serve over rice or pasta.
