Prepare the Base
- Line a 7" springform tin with parchment paper. Crush graham crackers finely and mix with melted unsalted butter. Press firmly into the base and chill for at least 1 hour.
Make the Filling
- Soften cream cheese at room temperature. Combine cream cheese, sugar, vanilla, and lemon juice until smooth. Whip thickened cream to stiff peaks and fold into cream cheese mixture. Pour over chilled base and chill for at least 4 hours.
Slice and Insert Sticks
- After setting, remove cheesecake from the tin and slice into pops. Insert popsicle sticks into each slice and freeze for an additional 4 hours.
Prepare Coatings
- Prepare each coating by mixing ingredients with a bit of milk to achieve desired consistency.
Coat the Cheesecake Sticks
- Dip each cheesecake stick into the desired sauce and roll in corresponding crumbs.
Final Freeze
- Return coated sticks to the freezer for 1-2 hours to solidify before serving.
