For the Compote
  • 1 cup fresh blueberries Frozen blueberries work too.
  • 2 tablespoons chia seeds Flax seeds are a great alternative.
  • 2 tablespoons pure maple syrup Swap in ripe bananas for a sugar-free option.
  • 1/2 unit lemon juice Adds bright flavor.
  • 1/2 unit lemon zest Brightens up the dish.
  • 1 teaspoon vanilla extract Optional for simplicity.
Optional Topping
  • 1/4 cup crumble granola Any granola you love.

Method
 

Preparation Steps
  1. In a bowl, mix 1 cup of old-fashioned rolled oats with 1 cup of your preferred plant-based milk, ensuring the oats are fully submerged. Stir well to blend, then cover and refrigerate overnight.
  2. In a saucepan over low heat, combine 1 cup of fresh or frozen blueberries, 2 tablespoons of chia seeds, 2 tablespoons of pure maple syrup, the juice and zest of half a lemon, and a splash of vanilla extract. Stir gently as the mixture heats for about 10–15 minutes.
  3. Once the oats have soaked overnight, layer the creamy oats with generous spoonfuls of the warm blueberry chia compote in serving bowls.
  4. Sprinkle crumble granola on top for added crunch and flavor. Optionally, finish with a sprinkle of lemon zest.
