Preparation Steps
- In a bowl, mix 1 cup of old-fashioned rolled oats with 1 cup of your preferred plant-based milk, ensuring the oats are fully submerged. Stir well to blend, then cover and refrigerate overnight.
- In a saucepan over low heat, combine 1 cup of fresh or frozen blueberries, 2 tablespoons of chia seeds, 2 tablespoons of pure maple syrup, the juice and zest of half a lemon, and a splash of vanilla extract. Stir gently as the mixture heats for about 10–15 minutes.
- Once the oats have soaked overnight, layer the creamy oats with generous spoonfuls of the warm blueberry chia compote in serving bowls.
- Sprinkle crumble granola on top for added crunch and flavor. Optionally, finish with a sprinkle of lemon zest.
