Preparation Steps
- Drain one can of whole kernel corn and transfer it to a large mixing bowl. Dice a red bell pepper and add into the bowl along with a generous handful of Mexican blend cheese.
- In the same bowl, dollop in about half a cup of mayonnaise and sprinkle in some freshly cracked black pepper. Gently fold the ingredients together until everything is well-coated.
- Right before serving, crush a bag of Chili Cheese Fritos slightly and fold them into the salad mixture.
- Coarsely chop some fresh cilantro and sprinkle it over the top of your salad. Serve immediately to maintain the crisp texture.
