Ingredients
  

For the Salad
  • 1 can Whole Kernel Corn Drain before use.
  • 1 Red Bell Pepper Diced
  • 1 cup Mexican Blend Cheese Shredded
  • 1/2 cup Mayonnaise Can substitute with light mayo or Greek yogurt.
  • to taste Black Pepper
  • 1 bag Chili Cheese Fritos Crush slightly before adding.
  • 1/4 cup Fresh Cilantro Chopped for garnish.
Optional Add-Ins
  • 1 cup Shredded Chicken Cooked or rotisserie for convenience.
  • 2 Chopped Green Onions
  • 1 cup Diced Tomatoes Ripe and seasonal.
  • 1 small jar Salsa For mixing in.

Method
 

Preparation Steps
  1. Drain one can of whole kernel corn and transfer it to a large mixing bowl. Dice a red bell pepper and add into the bowl along with a generous handful of Mexican blend cheese.
  2. In the same bowl, dollop in about half a cup of mayonnaise and sprinkle in some freshly cracked black pepper. Gently fold the ingredients together until everything is well-coated.
  3. Right before serving, crush a bag of Chili Cheese Fritos slightly and fold them into the salad mixture.
  4. Coarsely chop some fresh cilantro and sprinkle it over the top of your salad. Serve immediately to maintain the crisp texture.
