- Press the tofu to remove excess moisture, then combine with cashew nuts, panko, salt, and pepper in a food processor. Pulse until smooth and creamy.
- Dust hands with flour, scoop out portions of the tofu mixture, and shape them into nugget-sized pieces.
- Coat each nugget lightly with flour.
- Heat oil in a frying pan over medium heat until shimmering. Fry nuggets for 2-3 minutes on each side until golden brown.
- Remove from oil and let drain on paper towels.
- Cool slightly before serving with your favorite sauces.
