For the Nuggets
  • 14 oz Firm or extra-firm tofu Press to remove moisture
  • 1/2 cup Cashew nuts Substitute with almonds or omit for nut-free
  • 1 cup Panko Light breadcrumb for crispy coating
  • 1/4 cup Flour All-purpose or cake flour
  • 1 tsp Salt For seasoning
  • 1/2 tsp Pepper Adjust to taste
  • 2 tbsp Oil For frying, use oil with a high smoke point
For Dipping Sauces
  • 1/4 cup Ketchup Classic dipping sauce
  • 1/4 cup Barbecue sauce Tangy dip
  • 1/4 cup Spicy mayo Mix mayo with hot sauce

Method
 

Preparation
  1. Press the tofu to remove excess moisture, then combine with cashew nuts, panko, salt, and pepper in a food processor. Pulse until smooth and creamy.
  2. Dust hands with flour, scoop out portions of the tofu mixture, and shape them into nugget-sized pieces.
  3. Coat each nugget lightly with flour.
  4. Heat oil in a frying pan over medium heat until shimmering. Fry nuggets for 2-3 minutes on each side until golden brown.
  5. Remove from oil and let drain on paper towels.
  6. Cool slightly before serving with your favorite sauces.
