Preparation Steps
  1. Start by patting your chicken wings dry and season them with kosher salt and pepper. Let them dry brine in the refrigerator for at least 1 hour or overnight.

  4. Place the wings on the cool side of the grill and smoke them for about 45 minutes, checking for an internal temperature of 165°F (74°C).
