Ingredients
  

For the Dough
  • 3 cups All-Purpose Flour substitute with bread flour for added chewiness
  • 2 teaspoons Instant Dry Yeast store in the freezer for later use
  • 2 tablespoons Sugar
  • ½ teaspoon Salt
  • 2 tablespoons Roasted Sesame Seeds
  • 1 cup Warm Soy Milk any non-dairy milk works well as a substitute
  • 1 tablespoon Toasted Sesame Oil neutral oils can also be used
For the Filling
  • 1 tablespoon Neutral Oil used for sautéing the vegetables
  • 6 cups Raw Shredded Cabbage
  • 3.5 oz Uncooked Vermicelli Noodles ensure to soak before chopping
  • 1 cup Finely Shredded Carrot
  • ½ cup Chopped Scallions or Chives enhances flavor with a mild onion taste
  • 1 tablespoon Soy Sauce adjust salt content based on taste
  • 2 teaspoons Salt for seasoning the filling
  • 2 tablespoons Toasted Sesame Oil enhances the filling's flavor
  • 2 tablespoons Roasted Sesame Seeds adds a lovely nuttiness

Method
 

Step‑by‑Step Instructions
  1. In a large mixing bowl, combine the flour, yeast, sugar, and salt. Create a well, add warm soy milk and toasted sesame oil. Mix until a dough forms, knead for 5 minutes. Cover and let rise for at least 2 hours.
  2. Soak vermicelli noodles in boiling water for 5 minutes, chop them. In a skillet, heat oil, sauté scallions, carrots, and cabbage for 5-7 minutes. Add noodles, soy sauce, salt and sesame oil, mix and cool.
  3. Punch down the dough, divide it into 12-16 pieces, and roll each into a ball. Flatten each ball into a wrapper, keeping covered with a damp cloth.
  4. Fill each wrapper with 2-3 tablespoons of filling, pinch and twist to seal. Arrange on a lined tray.
  5. Heat oil in a frying pan, place the buns crease-side down. Cook for 4-5 minutes until golden, add water, cover and steam for 7-10 minutes.
  6. Remove from the pan, let cool slightly, and serve hot with a dipping sauce.
