  • 1 medium Fresh Pineapple Cut into rings
  • 1/4 cup Dark Rum
  • 1/4 cup Coconut Rum
For the Coating
  • 1 cup All-Purpose Flour Substitute with gluten-free flour if needed
  • 1 cup Sweetened Coconut Flakes Use unsweetened for less sweetness
  • 2 large Eggs Whisked; use flax eggs for vegan
For the Batter
  • 1/2 cup Coconut Milk Regular milk can be substituted
For Frying
  • 2 cups Vegetable Oil Coconut oil can be used
For the Dipping Sauce
  • 8 oz Cream Cheese Substitute with dairy-free for vegan
  • 1/2 cup Powdered Sugar Agave syrup works for vegan

Method
 

Preparation
  1. Soak the pineapple rings in dark and coconut rums for at least 1 hour, then drain and pat dry.
  2. Set up three bowls: one with flour, one with whisked eggs and coconut milk, and one with coconut flakes.
  3. Coat the pineapple rings in flour, then the egg mixture, and finally roll in coconut flakes.
  4. Heat vegetable oil to 350°F (175°C) and fry the rings in batches for 1 minute on each side until golden brown.
  5. Mix softened cream cheese and powdered sugar in a bowl, then stir in the rum until smooth, creating the dipping sauce.
