  • 1 cup Desiccated Coconut Choose unsweetened.
For the Coating
  • 1 cup Panko Breadcrumbs Lighter and crispier than regular breadcrumbs.
  • 1/2 cup Plain Flour Consider seasoned flour for extra flavor.
  • 2 large Eggs A vegan alternative can also be used.
For the Spice Mix
  • 1 teaspoon Smoked Paprika Adjust according to spice tolerance.
  • 1 teaspoon Garlic Powder Fresh garlic can also be used.
  • 1 teaspoon Onion Powder
  • 1/2 teaspoon Black Pepper Freshly ground is recommended.

Method
 

Step-by-Step Instructions
  1. Prepare the Prawns: Peel and devein the large prawns, leaving tails on. Rinse under cold water and drain.
  2. Season the Flour: Combine flour, smoked paprika, garlic powder, onion powder, black pepper, and salt in a bowl.
  3. Prepare Coating: Mix desiccated coconut and panko breadcrumbs in another bowl until well combined.
  4. Egg Mixture: Whisk eggs with a tablespoon of water until combined.
  5. Coat the Prawns: Dredge prawns in seasoned flour, dip in egg, and coat with the coconut mixture. Place on a lined tray.
  6. Chill Prawns: Refrigerate coated prawns for at least 1 hour.
  7. Fry Prawns: Heat oil to 325°F, fry prawns in small batches for about 2 minutes until golden brown.
  8. Drain and Serve: Remove from oil, drain on paper towels, and serve warm with sweet chilli dip.
