- Prepare the Prawns: Peel and devein the large prawns, leaving tails on. Rinse under cold water and drain.
- Season the Flour: Combine flour, smoked paprika, garlic powder, onion powder, black pepper, and salt in a bowl.
- Prepare Coating: Mix desiccated coconut and panko breadcrumbs in another bowl until well combined.
- Egg Mixture: Whisk eggs with a tablespoon of water until combined.
- Coat the Prawns: Dredge prawns in seasoned flour, dip in egg, and coat with the coconut mixture. Place on a lined tray.
- Chill Prawns: Refrigerate coated prawns for at least 1 hour.
- Fry Prawns: Heat oil to 325°F, fry prawns in small batches for about 2 minutes until golden brown.
- Drain and Serve: Remove from oil, drain on paper towels, and serve warm with sweet chilli dip.
