- Slice the rump or sirloin steak into thin strips against the grain. Combine the beef with light soy sauce, ginger garlic paste, sesame oil, sugar, and white pepper in a bowl. Marinate for at least 15 minutes.
- In a separate mixing bowl, whisk together sweet chilli sauce, ketchup, light soy sauce, vinegar, and a pinch of sugar. Set aside.
- Incorporate one egg with the marinated beef strips. Dredge the beef in corn or potato starch, shaking off any excess.
- Heat vegetable oil in a deep pan or fryer to about 350°F (175°C). Fry the coated beef in small batches for 1-2 minutes until crispy and golden brown.
- In a large pan or wok, heat a little oil and stir-fry sliced sweet onions and bell peppers for about 30 seconds until softened but still crunchy.
- Add the fried beef strips into the pan with vegetables and pour over the stir-fry sauce. Toss together over high heat for 1-2 minutes.
- Serve the crispy chilli beef with steamed rice or stir-fried noodles.
