  • 1 Egg Consider a flax egg for a vegan alternative.
  • 1/2 cup Corn/Potato Starch Avoid regular flour to ensure crispiness.
For the Vegetables
  • 1 Sweet Onion Yellow onion works well as a substitute.
  • 1 Bell Pepper Any variety will work.
  • 2 Spring Onions Swap with chives if desired.
  • 2 Birdeye/Hot Chillies Adjust according to spice preference.
For the Marinade & Sauce
  • 1/4 cup Light Soy Sauce Use tamari for a gluten-free option.
  • 1 tbsp Ginger Garlic Paste Fresh ginger and garlic can be used.
  • 1 tbsp Sesame Oil A neutral oil can be substituted.
  • 2 tbsp Sugar Brown sugar lends a richer taste.
  • 1/2 tsp White Pepper Black pepper can be a substitute.
  • 1/2 cup Sweet Chilli Sauce Feel free to make your own.
  • 2 tbsp Ketchup Chili sauce can be used for heat.
  • 1 tbsp Vinegar (White or Rice) Lime juice is a good alternative.
  • 1 tsp Salt Adjust for lower sodium preference.

Method
 

Cooking Instructions
  1. Slice the rump or sirloin steak into thin strips against the grain. Combine the beef with light soy sauce, ginger garlic paste, sesame oil, sugar, and white pepper in a bowl. Marinate for at least 15 minutes.
  2. In a separate mixing bowl, whisk together sweet chilli sauce, ketchup, light soy sauce, vinegar, and a pinch of sugar. Set aside.
  3. Incorporate one egg with the marinated beef strips. Dredge the beef in corn or potato starch, shaking off any excess.
  4. Heat vegetable oil in a deep pan or fryer to about 350°F (175°C). Fry the coated beef in small batches for 1-2 minutes until crispy and golden brown.
  5. In a large pan or wok, heat a little oil and stir-fry sliced sweet onions and bell peppers for about 30 seconds until softened but still crunchy.
  6. Add the fried beef strips into the pan with vegetables and pour over the stir-fry sauce. Toss together over high heat for 1-2 minutes.
  7. Serve the crispy chilli beef with steamed rice or stir-fried noodles.
