Step‑by‑Step Instructions
  1. Press Tofu: Remove tofu from packaging, drain, wrap in towels, and place a heavy object on top for 5 minutes.
  2. Cube Tofu: Slice pressed tofu into approximately 1-inch cubes, about 32 pieces.
  3. Preheat Oven: Set oven to 400ºF (200ºC) for baking.
  4. Prepare Coating: Mix cornstarch, panko breadcrumbs, and garlic powder in a bowl.
  5. Coat Tofu: Toss cubed tofu in the coating mixture until evenly coated.
  6. Bake: Spread coated tofu on a baking sheet and bake for 40 minutes, flipping halfway through.
  7. Make Bang Bang Sauce: Whisk together vegan mayonnaise, Sriracha, sugar, and salt in a bowl.
  8. Toss Tofu in Sauce: Mix baked tofu with Bang Bang sauce until well coated.
  9. Serve: Plate with rice or on its own; garnish with red pepper flakes and chopped chives.
