Ingredients
  

For the Salad
  • 2 medium Cucumbers English or Persian
  • 1/4 cup Fresh Mint minced finely
  • 2 tablespoons Fresh Dill optional, chopped
For the Dressing
  • 1/4 cup White Wine Vinegar or apple cider vinegar
  • 1 tablespoon Honey or maple syrup for vegan option
  • to taste Sea Salt
  • to taste Freshly Ground Black Pepper

Method
 

Preparation
  1. Wash the cucumbers under cool running water and thinly slice them into round pieces (about 1/8 inch thick). Set aside.
  2. In a mixing bowl, combine white wine vinegar, honey (or maple syrup), and whisk until well blended. Then add minced fresh mint and chopped dill (if using) and whisk for about 30 seconds.
  3. Pour the dressing over the sliced cucumbers in a large bowl. Gently toss to coat each slice evenly. Season with salt and pepper to taste, and toss again.
  4. Cover and chill in the refrigerator for 10-15 minutes before serving to let flavors meld. Give it a final stir before serving.
