Method
 

Cooking Instructions
  1. Cook the pasta in salted boiling water according to package instructions, typically about 8-10 minutes. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Sauté the chopped onion for about 5 minutes until translucent.
  3. Add minced garlic and sauté for another minute until fragrant.
  4. Pour in the pumpkin puree and coconut milk, add nutritional yeast, sage, nutmeg, salt, and pepper. Stir and simmer for about 5 minutes.
  5. Add fresh spinach and cook for 2-3 minutes until wilted.
  6. Adjust seasoning to taste, adding more salt and pepper if needed.
  7. Combine cooked pasta with the sauce, tossing to coat evenly. Cook for an additional 1-2 minutes.
  8. Serve in bowls, garnished with fresh parsley and optional vegan parmesan.
