Cooking Instructions
- Cook the pasta in salted boiling water according to package instructions, typically about 8-10 minutes. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Sauté the chopped onion for about 5 minutes until translucent.
- Add minced garlic and sauté for another minute until fragrant.
- Pour in the pumpkin puree and coconut milk, add nutritional yeast, sage, nutmeg, salt, and pepper. Stir and simmer for about 5 minutes.
- Add fresh spinach and cook for 2-3 minutes until wilted.
- Adjust seasoning to taste, adding more salt and pepper if needed.
- Combine cooked pasta with the sauce, tossing to coat evenly. Cook for an additional 1-2 minutes.
- Serve in bowls, garnished with fresh parsley and optional vegan parmesan.
