  3. Pour in white wine and simmer until most of the liquid has evaporated, about 3-4 minutes.
  4. Bring a large pot of salted water to a boil, add the gnocchi, and cook according to package instructions until they float (2-3 minutes). Reserve 1 cup of cooking water before draining.
  5. Stir in tomato paste and Italian seasoning with reserved pasta water, simmer for another 3-4 minutes.
  6. Add fresh spinach, cooking until just wilted, about 2-3 minutes.
  7. Reduce heat to low and fold in cream cheese, stirring until melted and smooth.
  8. Gently fold in drained gnocchi and flaked smoked salmon, ensuring even coating.
  9. Taste and adjust seasoning with salt and pepper, then serve immediately garnished with parsley.
