  • 2 cups Spinach Fresh baby spinach or thawed frozen spinach recommended.
  • 2 cloves Garlic Fresh garlic preferred.
  • 3 tablespoons Nutritional Yeast Adjust according to taste.
  • 2 tablespoons Lemon Juice Essential for a fresh taste.
  • 2 tablespoons Olive Oil For sautéing aromatics.
  • 1 teaspoon Salt Adjust based on personal preference.
  • 1 teaspoon Black Pepper Adjust to your liking.
  • 1/2 teaspoon Chili Flakes Optional, based on heat preference.
For the Pasta
  • 8 ounces Pasta of Choice Typically short pasta like fusilli.

Method
 

Cooking Instructions
  1. Bring 4-5 cups of salted water to a rolling boil in a large pot. Add pasta and cook for 2 minutes less than the package instructions suggest. Reserve ½ cup of the starchy pasta water.
  2. Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Add chili flakes and diced onions, then cook for about 3-4 minutes until onions are translucent.
  3. Add fresh spinach to the skillet and sauté for about 2-3 minutes until wilted and vibrant.
  4. Transfer the sautéed spinach mixture to a blender. Add silken tofu, nutritional yeast, lemon juice, salt, and black pepper. Blend until smooth and creamy.
  5. Return the sauce to the skillet over low heat. Add cooked pasta and toss gently. Gradually add reserved pasta water to adjust thickness, cooking for 2-3 minutes until heated through.
  6. Serve warm, garnished with nutritional yeast, fresh basil, or vegan parmesan if desired.
