Cooking Instructions
- Bring 4-5 cups of salted water to a rolling boil in a large pot. Add pasta and cook for 2 minutes less than the package instructions suggest. Reserve ½ cup of the starchy pasta water.
- Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Add chili flakes and diced onions, then cook for about 3-4 minutes until onions are translucent.
- Add fresh spinach to the skillet and sauté for about 2-3 minutes until wilted and vibrant.
- Transfer the sautéed spinach mixture to a blender. Add silken tofu, nutritional yeast, lemon juice, salt, and black pepper. Blend until smooth and creamy.
- Return the sauce to the skillet over low heat. Add cooked pasta and toss gently. Gradually add reserved pasta water to adjust thickness, cooking for 2-3 minutes until heated through.
- Serve warm, garnished with nutritional yeast, fresh basil, or vegan parmesan if desired.
