  • 1 pound Ground Beef lean
  • 8 ounces Mushrooms sliced, cremini or shiitake
  • 1 can Cream of Mushroom Soup homemade or canned
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 1 cup Cheese optional, consider dairy-free
  • Seasonings (salt, pepper, herbs) to taste, thyme or parsley recommended
For Serving
  • 1 loaf Crusty Bread for soaking
  • 1 cup Simple Side Salad optional

Method
 

Directions
  1. Preheat your oven to 350°F (175°C) and heat a large skillet over medium heat.
  2. Add the ground beef to the skillet, breaking it apart, and cook for 6-8 minutes until browned. Drain excess fat.
  3. In the same skillet, add chopped onion and minced garlic; sauté for 3-4 minutes until translucent.
  4. Add sliced mushrooms and cook for another 5-7 minutes until softened.
  5. Pour in the cream of mushroom soup and chosen seasonings; stir to combine and heat through.
  6. Transfer the mixture to a greased casserole dish and top with cheese if desired.
  7. Cover with aluminum foil and bake for 25-30 minutes until bubbly.
  8. Let rest for 5 minutes before serving with crusty bread or a fresh side salad.
