Preparation
- Preheat your oven to 350℉ (180℃) and line an 8x8-inch baking pan with parchment paper or lightly spray with cooking spray.
- Melt 7 tablespoons of unsalted butter in a microwave-safe bowl. Combine with graham cracker crumbs, ground pecans, and brown sugar, stirring until evenly mixed.
- Transfer the crust mixture into the baking pan, pressing it evenly. Bake for about 10 minutes until golden and fragrant.
- In a medium mixing bowl, whisk together 3 egg yolks and the zest from 2 limes at high speed for approximately 5 minutes until lightened.
- Add the sweetened condensed milk to the egg yolk mixture and whisk for 10 seconds. Squeeze in the lime juice and mix for another 10 seconds.
- Pour the lime filling over the cooled crust in the baking pan and bake for 15-18 minutes until the center is just set.
- Allow the bars to cool at room temperature for at least 30 minutes, then refrigerate for a minimum of 2 hours.
- Lift the bars from the pan using the parchment paper, cut into squares, and serve chilled with whipped cream or enjoy as is.
