Method
 

Preparation
  1. Preheat your oven to 350℉ (180℃) and line an 8x8-inch baking pan with parchment paper or lightly spray with cooking spray.
  2. Melt 7 tablespoons of unsalted butter in a microwave-safe bowl. Combine with graham cracker crumbs, ground pecans, and brown sugar, stirring until evenly mixed.
  3. Transfer the crust mixture into the baking pan, pressing it evenly. Bake for about 10 minutes until golden and fragrant.
  4. In a medium mixing bowl, whisk together 3 egg yolks and the zest from 2 limes at high speed for approximately 5 minutes until lightened.
  5. Add the sweetened condensed milk to the egg yolk mixture and whisk for 10 seconds. Squeeze in the lime juice and mix for another 10 seconds.
  6. Pour the lime filling over the cooled crust in the baking pan and bake for 15-18 minutes until the center is just set.
  7. Allow the bars to cool at room temperature for at least 30 minutes, then refrigerate for a minimum of 2 hours.
  8. Lift the bars from the pan using the parchment paper, cut into squares, and serve chilled with whipped cream or enjoy as is.
