  • 1 cup Fresh Raspberries Frozen raspberries can be used, ensure they’re thawed and drained.
  • 2 tbsp Honey or Maple Syrup Other options include agave syrup or stevia.
  • 1 tsp Vanilla Extract No substitutions recommended.
For Garnishing
  • 1/2 cup Fresh Raspberries To garnish on top.
  • a few Mint Leaves For garnish and flavor contrast.

Method
 

Step-by-Step Instructions
  1. In a blender or food processor, combine the cottage cheese, fresh raspberries, honey or maple syrup, and vanilla extract. Blend on high for about 1-2 minutes until smooth.
  2. Carefully spoon the mixture into four serving glasses or bowls, leaving half an inch at the top for garnishing.
  3. Place the filled glasses in the refrigerator and chill for at least 1 hour until set.
  4. Garnish each glass with fresh raspberries and mint leaves before serving.
