Ingredients
  

For the Pasta
  • 8 oz Bowtie Pasta Can replace with penne or rotini.
For the Protein
  • 2 cups Boneless, Skinless Chicken Breasts For vegetarian version, use tofu or chickpeas.
For the Broth
  • 4 cups Chicken Broth Use vegetable broth for a vegetarian version.
For the Vegetables
  • 2 cups Broccoli Florets Fresh is best for texture.
  • 1 cup Carrots Thinly sliced for even roasting.
For the Sauce
  • 2 tbsp Olive Oil Vegetable oil can be used.
  • 1 cup Heavy Cream Half-and-half or a mix of Greek yogurt and milk can lighten it.
  • 1 cup Shredded Sharp Cheddar Cheese Freshly shredded melts better.
  • 1 cup Shredded Havarti Cheese Other cheeses like Gouda or Fontina can be experimented with.
  • 1 tbsp Italian Seasoning
  • 3 cloves Garlic Minced.
  • 1 tsp Salt
  • 1 tsp Freshly Ground Black Pepper
For the Garnish
  • 2 tbsp Fresh Parsley Adds a pop of color and flavor.

Method
 

Preparation Steps
  1. Preheat your oven to 425°F (220°C).
  2. In a large mixing bowl, toss the broccoli and carrots with olive oil, salt, and pepper.
  3. Spread the vegetables on a baking sheet and roast for 15-20 minutes.
  4. In a pot, bring chicken broth to a boil, add the bowtie pasta and cook for 10-12 minutes.
  5. In a skillet, add olive oil and cook the chicken for 6-7 minutes per side until golden brown.
  6. In the same skillet, sauté garlic and add heavy cream. Whisk in cheddar and Havarti until melted.
  7. Combine drained pasta, roasted vegetables, and chicken into the cheese sauce, and mix well.
  8. Serve immediately, garnishing with parsley and extra cheese.
