Preparation Steps
- Preheat your oven to 425°F (220°C).
- In a large mixing bowl, toss the broccoli and carrots with olive oil, salt, and pepper.
- Spread the vegetables on a baking sheet and roast for 15-20 minutes.
- In a pot, bring chicken broth to a boil, add the bowtie pasta and cook for 10-12 minutes.
- In a skillet, add olive oil and cook the chicken for 6-7 minutes per side until golden brown.
- In the same skillet, sauté garlic and add heavy cream. Whisk in cheddar and Havarti until melted.
- Combine drained pasta, roasted vegetables, and chicken into the cheese sauce, and mix well.
- Serve immediately, garnishing with parsley and extra cheese.
