  • 1 pound Italian Sausage mild or spicy
  • 1 medium Onion yellow or white
  • 2 cloves Garlic minced
  • 1 head Cauliflower chopped

  • 4 cups Chicken or Vegetable Broth low-sodium recommended
  • 1 cup Water
  • 1 teaspoon Dried Thyme or fresh thyme in higher quantity
  • 1 teaspoon Dried Oregano or triple the amount for fresh

For the Greens
  • 4 cups Kale chopped
Optional Creaminess
  • 1/2 cup Heavy Cream or coconut cream for a non-dairy alternative

Method
 

Step-by-Step Instructions
  1. Heat 2 tablespoons of olive oil in a large pot over medium heat for 1-2 minutes.
  2. Add 1 pound of Italian sausage, cook until browned, about 5-7 minutes, and drain excess fat.
  3. Stir in 1 chopped onion and 2 minced garlic cloves, sauté for 2-3 minutes until translucent.
  4. Add 1 head of chopped cauliflower, sauté together for 1-2 minutes.
  5. Pour in 4 cups of broth and 1 cup of water, bring to a boil.
  6. Stir in 1 teaspoon of dried thyme, 1 teaspoon of dried oregano, and season with salt and pepper. Simmer for 15 minutes.
  7. Add 4 cups of chopped kale, stir, and let wilt for about 5 minutes.
  8. If desired, mix in 1/2 cup of heavy cream and stir until fully incorporated.
  9. Taste and adjust seasoning before serving.
  10. Serve hot, garnished with grated Parmesan cheese and fresh parsley if desired.
