Dough Preparation
  1. In a large mixing bowl, activate your yeast by combining warm milk and granulated sugar; let it sit for 5 minutes until frothy.
  2. Mix in the melted unsalted butter and eggs until well incorporated.
  3. Gradually add in the all-purpose flour, orange zest, and salt, kneading the dough for about 5-10 minutes until elastic and smooth.
  4. Cover the bowl with a damp cloth and let the dough rise in a warm place until doubled in size, approximately 1 to 1.5 hours.
Filling Preparation
  1. In a medium saucepan over medium heat, combine fresh cranberries, sugar, orange juice, and your choice of spices.
  2. Cook for 10-15 minutes until the cranberries burst and the mixture thickens.
  3. Remove from heat and gently mash the mixture to combine the flavors, then set aside to cool.
Bread Assembly
  1. Once dough has risen, punch it down gently, and divide it into four equal parts.
  2. On a lightly floured surface, roll one part into a circle about 12 inches in diameter.
  3. Spread a portion of the cooled cranberry filling evenly over the dough, then repeat with the next two dough portions.
  4. Layer them on top of each other, finishing with the fourth dough circle on top.
  5. Using a sharp knife, cut the stack into 16 equal strips, then twist each strip to form the star shape.
  6. Let it rise again for about 45 minutes, covered with a cloth.
Baking
  1. Preheat your oven to 350°F while the shaped bread is rising.
  2. Once risen, brush the top of the Cranberry Star Bread with an egg wash for a glossy finish.
  3. Carefully place the bread in the oven and bake for about 30 minutes, or until the top is golden brown and fragrant.
  4. To check doneness, tap the bottom; it should sound hollow.
