Method
 

Step-by-Step Instructions
  1. Sear the Beef: In a large skillet, heat a drizzle of olive oil over medium-high heat. Sear the beef for 3-4 minutes until golden brown.
  2. Sauté the Aromatics: Remove the beef and in the same pan, sauté onion, garlic, and ginger for 2-3 minutes until fragrant. Stir in curry paste and cook for another minute.
  3. Combine Ingredients: Transfer beef and aromatics to the slow cooker. Add broth, coconut milk, soy sauce, and brown sugar. Stir to combine.
  4. Slow Cook: Cover and cook on low for 6-7 hours or high for 3-4 hours until beef is tender.
  5. Add the Veggies: 30 minutes before serving, stir in carrots and bell peppers, and cook for another 10 minutes.
  6. Finish with Spinach: Just before serving, fold in baby spinach and let it wilt.
  7. Serve and Garnish: Ladle into bowls, add lime juice, and garnish with green onions and cilantro.
