Preparation
- Preheat your oven to 170ºC (340ºF) and prepare the cake pans.
- Sift together the dry ingredients: flour, cornstarch, spices, baking powder, baking soda, and salt.
- Cream together the butter, granulated sugar, and dark brown sugar until light and fluffy.
- Add eggs one at a time to the butter-sugar mixture, mixing until smooth.
- Gradually incorporate the dry mixture, add sour cream, vegetable oil, and vanilla, then mix until smooth.
- Divide the batter between prepared pans and bake for 28-30 minutes until a toothpick comes out clean.
- Cool the cakes in the pans for 5 minutes, then invert onto a wire rack to cool completely.
Frosting & Assembly
- Beat together cream cheese and butter with brown sugar until smooth, gradually adding powdered sugar.
- Place one cake layer on a plate, spread frosting on top, then add the second layer and frost the entire cake.
- Slice and serve the cake, enjoying the warm, spiced flavors.
