Ingredients
  

For the Cake
  • 1 cup Butter room temperature
  • 1 cup Granulated Sugar
  • 1 cup Dark Brown Sugar
  • 3 large Eggs room temperature
  • 2 cups All-Purpose Flour
  • 1 cup Cornstarch
  • 1 teaspoon Ground Cardamom
  • 1 teaspoon Ground Cinnamon
  • 1 teaspoon Ground Ginger
  • 1 teaspoon Ground Allspice
  • 1 teaspoon Ground Nutmeg
  • 1/2 teaspoon Ground Black Pepper
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Baking Soda
  • 1/2 teaspoon Salt
  • 1 cup Sour Cream can substitute with Greek yogurt
  • 1/2 cup Vegetable Oil
  • 1 teaspoon Vanilla Extract
For the Frosting
  • 2 cups Powdered Sugar
  • 8 oz Cream Cheese room temperature

Method
 

Preparation
  1. Preheat your oven to 170ºC (340ºF) and prepare the cake pans.
  2. Sift together the dry ingredients: flour, cornstarch, spices, baking powder, baking soda, and salt.
  3. Cream together the butter, granulated sugar, and dark brown sugar until light and fluffy.
  4. Add eggs one at a time to the butter-sugar mixture, mixing until smooth.
  5. Gradually incorporate the dry mixture, add sour cream, vegetable oil, and vanilla, then mix until smooth.
  6. Divide the batter between prepared pans and bake for 28-30 minutes until a toothpick comes out clean.
  7. Cool the cakes in the pans for 5 minutes, then invert onto a wire rack to cool completely.
Frosting & Assembly
  1. Beat together cream cheese and butter with brown sugar until smooth, gradually adding powdered sugar.
  2. Place one cake layer on a plate, spread frosting on top, then add the second layer and frost the entire cake.
  3. Slice and serve the cake, enjoying the warm, spiced flavors.
