- Preheat your oven to 350°F (175°C) and grease a 9x9 or 11x7 inch baking pan.
- In a small bowl, combine 2 tablespoons of ground flaxseed with 6 tablespoons of water to create flax eggs. Stir well and let thicken for 5 minutes.
- In a large mixing bowl, combine rolled oats, chopped pecans or walnuts, cinnamon, nutmeg, baking powder, and salt.
- In another bowl, whisk together unsweetened applesauce, non-dairy mylk, flax eggs, pure maple syrup, and vanilla extract.
- Gently fold the wet ingredients into the dry ingredients and add the blueberries.
- Transfer the mixture into the prepared baking pan and sprinkle additional blueberries on top.
- Bake for 35-45 minutes, checking at 35 minutes for a set center.
- Let cool for about 5 minutes before slicing and serve with your choice of toppings.
