  2. Step 2: In a bowl, combine flour, oats, brown sugar, granulated sugar, salt, and cinnamon. Cut in butter until the mixture resembles coarse crumbs. Set aside 1 ½ cups for topping, then press remaining into the baking pan and bake for 10-12 minutes until golden.
  3. Step 3: For the filling, combine chopped apples, cornstarch, lemon juice, vanilla extract, cinnamon, and nutmeg. Stir well and let sit for a few minutes.
  4. Step 4: Spread apple mixture over crust, sprinkle reserved crumb mixture on top, and bake for an additional 25-30 minutes until golden.
  5. Step 5: Cool completely in the pan for at least 1-2 hours before slicing.
  6. Step 6: If desired, prepare a glaze to drizzle over the cooled bars.
