Step-by-Step Instructions
  1. Start by adding 1 cup of cottage cheese and 2 large eggs to a high-speed blender. Blend the mixture on high for 20-30 seconds until it becomes completely smooth, resembling a pancake batter.
  2. Place a small nonstick skillet over low to medium-low heat, allowing it to warm for a minute. Lightly grease the skillet with oil or cooking spray.
  3. Once the skillet is preheated, pour about 1/3 cup of the cottage cheese mixture into the center of the pan. Gently tilt the skillet in circular motions to spread the batter into a thin layer.
  4. Allow the wrap to cook undisturbed for 3-5 minutes. Watch for the edges to lift and the surface to bubble. Carefully flip the wrap and cook for an additional 1-2 minutes until golden brown.
  5. Transfer the cooked wrap to a plate and let it cool for 2-3 minutes. Repeat with the remaining batter.
  6. For a batch of wraps, spread the remaining batter onto a parchment-lined baking sheet. Preheat your oven to 350°F (175°C) and bake for 18-20 minutes.
