Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and spray a 9x13-inch baking dish with nonstick spray.
  2. Season the chicken breasts with salt and black pepper. Sear in a skillet over medium-high heat for about 5 minutes per side until golden brown.
  3. Remove the chicken, and in the same skillet, sauté the chopped onion and minced garlic for about 3 minutes until translucent.
  4. In a bowl, mix the cream of mushroom soup, chicken broth, soy sauce, paprika, and thyme until smooth.
  5. Place the seared chicken in the baking dish and pour the creamy sauce over it, ensuring it's well covered.
  6. Cover with foil and bake for 30 to 35 minutes until the chicken reaches an internal temperature of 165°F (74°C).
  7. Let it rest, then fluff the cooked rice and spoon the chicken and sauce over it before serving.
