- Preheat your oven to 375°F (190°C) and spray a 9x13-inch baking dish with nonstick spray.
- Season the chicken breasts with salt and black pepper. Sear in a skillet over medium-high heat for about 5 minutes per side until golden brown.
- Remove the chicken, and in the same skillet, sauté the chopped onion and minced garlic for about 3 minutes until translucent.
- In a bowl, mix the cream of mushroom soup, chicken broth, soy sauce, paprika, and thyme until smooth.
- Place the seared chicken in the baking dish and pour the creamy sauce over it, ensuring it's well covered.
- Cover with foil and bake for 30 to 35 minutes until the chicken reaches an internal temperature of 165°F (74°C).
- Let it rest, then fluff the cooked rice and spoon the chicken and sauce over it before serving.
