Step-by-Step Instructions for Lasagna Soup
  1. In a large pot, heat 2 tablespoons of olive oil over medium heat until shimmering. Add 1 pound of lean ground beef and cook until it’s browned, about 5-7 minutes. Stir in 1 diced onion and 3 minced garlic cloves, sautéing for an additional 2-3 minutes until the onions are soft and translucent.
  2. Add 1 can of diced tomatoes, 1 cup of tomato sauce, and 2 tablespoons of tomato paste to the pot. Pour in 4 cups of chicken broth and 1 cup of water. Sprinkle in 2 teaspoons of Italian seasoning, along with sea salt and black pepper to taste. Bring the mixture to a simmer for 20 minutes.
  3. Add 2 cups of uncooked bowtie pasta to the pot, stirring well to combine. Simmer for another 10-15 minutes, or until the pasta is al dente.
  4. Ladle the soup into bowls, topping each serving with ¼ cup of ricotta cheese, ½ cup of shredded mozzarella, and shaved parmesan. Garnish with chopped parsley.
