  • 2 cans Kidney Beans Rinsed.

  • 1 cup Milk Optional.
  • 1 tablespoon Brown Sugar or Panela For flavor depth.
  • 1 teaspoon Paprika For mild smokiness.
  • 1 leaf Bay Leaf Remove before serving.
For Toppings
  • 2 ripe Fried Ripe Plantains Sliced.
  • 1 medium Avocado Diced.
  • 1 cup Queso Fresco or Feta Cheese Crumble on top.

Step-by-Step Instructions
  1. In a medium pot, heat vegetable oil over medium heat. Add chopped green onions and minced white onions, sauté for about 5 minutes until translucent.
  2. Stir in minced garlic and cook for 2 more minutes. Season with salt, pepper, and chopped cilantro.
  3. Pour in beef broth and add rinsed kidney beans. If using, add milk. Bring to a gentle simmer for 5 minutes.
  4. Add brown sugar or panela, paprika, and bay leaf. Cover and let simmer for 20-30 minutes, stirring occasionally.
  5. While soup simmers, peel and slice ripe plantains. Fry in heated oil until golden brown and crisp, about 3-4 minutes each side.
  6. Taste the soup and adjust seasoning. Remove bay leaf, ladle soup into bowls, and top with fried plantains, diced avocado, and crumbled queso fresco.
