Step‑by‑Step Instructions
  1. Combine sliced peaches with brown sugar, granulated sugar, corn starch, vanilla extract, cinnamon, salt, nutmeg, cardamom, and lemon juice in a large bowl. Stir gently and let it sit for about 10 minutes.
  2. Preheat oven to 350°F (175°C). Pour peach mixture into a 9-inch cast iron skillet, spreading it evenly. Cut cinnamon rolls into bite-sized pieces and scatter over peach filling. Optionally, sprinkle with toasted pecans.
  3. Dot cinnamon rolls with small pieces of room temperature unsalted butter. Bake for approximately 40-45 minutes until cinnamon rolls are golden brown and peach filling is bubbly.
  4. Prepare optional cream cheese frosting by beating cream cheese and softened butter until smooth. Gradually mix in vanilla, powdered sugar, and a pinch of salt until fluffy.
