Baking Instructions
- Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
- In a mixing bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, cinnamon, and salt.
- In another bowl, mix the egg, applesauce, apple cider, vegetable oil, and vanilla extract.
- Combine the wet and dry ingredients, stirring until just mixed.
- Fill each cupcake liner about 2/3 full with batter.
- Bake for 20-25 minutes, or until a toothpick inserted comes out clean.
- Let the cupcakes cool in the pan for 10 minutes, then remove to a wire rack to cool completely.
Frosting Instructions
- In a medium bowl, beat the softened cream cheese and butter together until smooth.
- Gradually add powdered sugar, mixing until fully incorporated.
- Stir in vanilla extract and ground cinnamon.
- Frost the cooled cupcakes with the cream cheese frosting.
