  • 1 large Egg
  • 1/2 cup Applesauce Unsweetened
  • 1 cup Apple cider
  • 1/4 cup Vegetable oil
  • 1 tsp Vanilla extract
Frosting Ingredients
  • 8 oz Cream cheese Softened
  • 1/2 cup Butter Softened
  • 2 cups Powdered sugar
  • 1 tsp Vanilla extract
  • 1 tsp Ground cinnamon

Method
 

Baking Instructions
  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a mixing bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, cinnamon, and salt.
  3. In another bowl, mix the egg, applesauce, apple cider, vegetable oil, and vanilla extract.
  4. Combine the wet and dry ingredients, stirring until just mixed.
  5. Fill each cupcake liner about 2/3 full with batter.
  6. Bake for 20-25 minutes, or until a toothpick inserted comes out clean.
  7. Let the cupcakes cool in the pan for 10 minutes, then remove to a wire rack to cool completely.
Frosting Instructions
  1. In a medium bowl, beat the softened cream cheese and butter together until smooth.
  2. Gradually add powdered sugar, mixing until fully incorporated.
  3. Stir in vanilla extract and ground cinnamon.
  4. Frost the cooled cupcakes with the cream cheese frosting.
