  • 2 cups Cherry Tomatoes halved
  • 1 can White Beans rinsed and drained
  • 1/4 cup Fresh Herbs chopped (basil or parsley)
For the Dressing
  • 3 tablespoons Olive Oil extra virgin recommended
  • 1 tablespoon Lemon Juice freshly squeezed
  • 2 cloves Garlic minced
  • to taste Salt
  • to taste Pepper

Method
 

Preparation Steps
  1. Rinse one can of white beans under cold water and drain well. Slice cherry tomatoes in half.
  2. In a small bowl, whisk together olive oil, lemon juice, minced garlic, salt, and pepper.
  3. In a large mixing bowl, combine halved cherry tomatoes and rinsed white beans. Pour dressing over them and toss gently.
  4. Add chopped herbs to the mixing bowl and fold them in gently.
  5. Cover and chill in the refrigerator for about 10 minutes before serving.
