- Preheat your oven to 350°F (175°C). Prepare an 8-inch square baking pan by lining it with parchment paper or lightly greasing it.
- Mash the overripe bananas in a mixing bowl until smooth. Stir in the melted butter, brown sugar, egg, and vanilla extract until creamy.
- Sift together the flour, baking soda, and salt in a separate bowl.
- Fold the dry ingredients into the wet banana mixture gently. If adding mix-ins, fold in the chocolate chips or nuts.
- Pour the batter into the prepared pan and spread evenly. Bake for 20-25 minutes, until the edges are set and a toothpick comes out with moist crumbs.
- Cool the blondies in the pan for 10 minutes, then lift out using parchment paper and cool completely on a wire rack. Cut into squares to serve.
