Preparation Steps
- Preheat your oven to 325°F (160°C) and prepare a loaf pan lined with parchment paper or lightly sprayed with non-stick cooking spray.
- In a large mixing bowl, whisk together all-purpose flour, almond flour, granulated sugar, baking powder, and coarse kosher salt until evenly combined.
- In another bowl, whisk together large eggs, whole milk, amaretto, melted unsalted butter, vanilla extract, and almond extract until smooth.
- Gently fold the wet mixture into the dry ingredients, then add in chopped fresh cherries.
- Pour the batter into the prepared loaf pan and bake for 55-60 minutes.
- Allow the cake to cool in the pan for about 10 minutes, then transfer to a wire rack.
- In a mixing bowl, beat softened unsalted butter until smooth, then gradually add cherry jam and powdered sugar, whipping until fluffy.
- Once the loaf cake is cooled, frost with buttercream and decorate with fresh cherries.
