  1. Start by heating 1 tablespoon of olive oil in a large skillet over medium heat.
  2. Add 1 pound of ground beef to the skillet, breaking it apart as it cooks. Sauté for about 5–7 minutes until nicely browned.
  3. Stir in one chopped medium onion and two minced garlic cloves. Cook for 3-4 minutes until the onion becomes translucent and fragrant.
  4. Incorporate 3 diced medium potatoes into the mixture and sprinkle in 1 teaspoon of salt, 1/2 teaspoon of black pepper, 1 teaspoon of paprika, and 1/2 teaspoon of dried oregano.
  5. Pour in 1/2 cup of beef broth, then cover the skillet and reduce the heat to low, cooking for 20-25 minutes.
  6. Once the potatoes are fork-tender, sprinkle 1 cup of shredded cheddar cheese evenly over the top and cover the skillet again, cooking for an additional 2-3 minutes.
  7. Remove the skillet from heat and garnish with 1 tablespoon of chopped fresh parsley before serving.
