  • 4 cups carrots, diced or shredded fresh or frozen
  • 2 cups cheese sauce blend cheddar and cream
  • 3 tablespoons butter or olive oil for a lighter alternative
  • to taste seasoning (salt, pepper) adjust to enhance flavors
For the Topping
  • 1 cup cornflakes or crushed potato chips/panko

Method
 

Directions
  1. Preheat your oven to 350°F (175°C) and prepare your baking dish with butter.
  2. Prepare the carrots by peeling, dicing or shredding, and steaming or boiling until tender.
  3. In a medium saucepan, melt butter, whisk in flour, and gradually add milk, stirring until smooth. Add cheddar cheese and stir until melted.
  4. Combine the carrots with the cheese sauce in a mixing bowl and transfer to the baking dish.
  5. In a small bowl, mix crushed cornflakes with melted butter, then sprinkle over the casserole.
  6. Bake in the oven for 25-30 minutes until golden brown and bubbly.
  7. Allow the casserole to cool for 5-10 minutes before serving.
