Method
 

Preparation Steps
  1. Preheat your oven to 160°C (320°F) and line an 8 x 8-inch baking pan with greased baking paper.
  2. In a food processor, blitz the digestive biscuits into fine crumbs. Melt the unsalted butter and combine it with the biscuit crumbs, mixing until well-coated. Press this mixture into the prepared baking pan and chill for 15 minutes.
  3. In a mixing bowl, beat the cream cheese until smooth. Gradually add the sugar, salt, vanilla, and eggs, blending until incorporated. Pour this over the chilled crust.
  4. Peel, core, and chop the apples. Toss them with granulated sugar, lemon zest, cinnamon, and nutmeg. Set aside.
  5. In another bowl, combine flour, demerara sugar, and granulated sugar. Add chilled butter and rub into dry ingredients until it resembles coarse crumbs.
  6. Spread the apples over the cheesecake layer and top with the crumble mixture. Bake for 45-50 minutes until golden.
  7. Cool for 30 minutes then refrigerate for at least 3 hours before slicing.
