Preparation Steps
- Preheat your oven to 160°C (320°F) and line an 8 x 8-inch baking pan with greased baking paper.
- In a food processor, blitz the digestive biscuits into fine crumbs. Melt the unsalted butter and combine it with the biscuit crumbs, mixing until well-coated. Press this mixture into the prepared baking pan and chill for 15 minutes.
- In a mixing bowl, beat the cream cheese until smooth. Gradually add the sugar, salt, vanilla, and eggs, blending until incorporated. Pour this over the chilled crust.
- Peel, core, and chop the apples. Toss them with granulated sugar, lemon zest, cinnamon, and nutmeg. Set aside.
- In another bowl, combine flour, demerara sugar, and granulated sugar. Add chilled butter and rub into dry ingredients until it resembles coarse crumbs.
- Spread the apples over the cheesecake layer and top with the crumble mixture. Bake for 45-50 minutes until golden.
- Cool for 30 minutes then refrigerate for at least 3 hours before slicing.
