Method
 

Steps
  1. In a blender, combine frozen blueberries, unsweetened vanilla almond milk, fresh lemon juice, lemon zest, maple syrup, cinnamon, and vanilla extract. Blend on high for about 30 seconds until smooth.
  2. Add chia seeds to the mixture in the blender. Blend on low speed for 10-15 seconds to distribute the chia seeds evenly.
  3. Pour the chia pudding mixture into a jar or airtight container, leaving space for expansion. Cover and refrigerate for 20-30 minutes.
  4. Let the pudding set in the refrigerator overnight for optimal texture, allowing chia seeds to expand.
  5. Remove pudding from refrigerator, stir well. If desired, add a splash of almond milk to adjust consistency. Serve with toppings.
  6. Store any leftovers in airtight containers in the refrigerator for up to 3 days.
