Method
 

Cooking Instructions
  1. Preheat your oven to 400°F (200°C). Gather your baking sheet and parchment paper if desired.
  2. Wash the sweet potatoes thoroughly and poke several holes in each to allow steam to escape.
  3. Arrange the sweet potatoes on the baking sheet and bake for 45–60 minutes until fork-tender.
  4. While the sweet potatoes bake, shred the cooked chicken in a bowl and mix in the BBQ sauce.
  5. Remove sweet potatoes, slice them open lengthwise, and fluff the insides.
  6. Spoon the BBQ chicken mixture into the fluffed sweet potatoes, drizzle with ranch dressing, and top with cheddar cheese.
  7. Place the stuffed sweet potatoes back in the oven for an additional 5–10 minutes to melt the cheese.
  8. Garnish with chopped green onions or cilantro before serving.
