Step-by-Step Instructions for Bang Bang Fried Rice
- In a medium bowl, whisk together mayonnaise, sweet chili sauce, Sriracha, and rice vinegar until smooth. Set aside.
- Heat a tablespoon of canola oil in a large skillet over medium-high heat. Add the seasoned chicken and cook for 5–6 minutes until browned. Remove and keep warm.
- In the same skillet, reduce heat and add beaten eggs. Scramble for 2-3 minutes until fluffy, then transfer to the plate with chicken.
- Increase heat, add more oil, then sauté diced carrots and minced garlic for 2-3 minutes. Stir in green peas and cook for an additional minute.
- Add cold rice to the skillet. Stir-fry for 3–4 minutes until slightly crisp.
- Return chicken and eggs to the skillet, drizzle soy sauce and pour Bang Bang sauce over everything. Stir well and cook for another 2–3 minutes.
