Step-by-Step Instructions for Bang Bang Fried Rice
  1. In a medium bowl, whisk together mayonnaise, sweet chili sauce, Sriracha, and rice vinegar until smooth. Set aside.
  2. Heat a tablespoon of canola oil in a large skillet over medium-high heat. Add the seasoned chicken and cook for 5–6 minutes until browned. Remove and keep warm.
  3. In the same skillet, reduce heat and add beaten eggs. Scramble for 2-3 minutes until fluffy, then transfer to the plate with chicken.
  4. Increase heat, add more oil, then sauté diced carrots and minced garlic for 2-3 minutes. Stir in green peas and cook for an additional minute.
  5. Add cold rice to the skillet. Stir-fry for 3–4 minutes until slightly crisp.
  6. Return chicken and eggs to the skillet, drizzle soy sauce and pour Bang Bang sauce over everything. Stir well and cook for another 2–3 minutes.
  7. Transfer to a serving platter, garnish with sliced green onions, and serve hot.
