Ingredients
  

For the Rice
  • 4 cups cooked rice preferably day-old rice
For the Protein
  • 1 lb chicken breast cut into bite-sized pieces
For the Eggs
  • 3 eggs lightly beaten
For the Vegetables
  • 1 cup carrots diced small
  • 1 cup green peas frozen or fresh
For the Flavor
  • 3 cloves garlic minced
  • 4 stalks green onions sliced
  • 4 tbsp soy sauce use tamari for gluten-free
For the Bang Bang Sauce
  • 1 cup Bang Bang Sauce made of mayonnaise, Sriracha, sweet chili sauce, and rice vinegar
For Cooking
  • 2 tbsp oil neutral oil like canola or vegetable

Method
 

Preparation
  1. Make the Bang Bang Sauce by whisking together mayonnaise, sweet chili sauce, Sriracha, and rice vinegar until smooth and set aside.
  2. Heat 1 tablespoon of oil in a large skillet over medium-high heat, add chicken, and cook for 5-6 minutes until browned.
  3. Remove chicken and scramble the beaten eggs in the same pan for 2-3 minutes, then set aside with the chicken.
  4. Add more oil and sauté diced carrots and minced garlic for 2-3 minutes, then stir in green peas for 1 more minute.
  5. Increase heat to high and add cold, day-old rice, stir-frying for 3-4 minutes until crisped.
  6. Return chicken and scrambled eggs to the pan, pour soy sauce over, and cook for an additional minute.
  7. Pour the Bang Bang sauce over the mixture and stir until well-coated and heated through.
  8. Garnish with sliced green onions and serve hot.
