- Make the Bang Bang Sauce by whisking together mayonnaise, sweet chili sauce, Sriracha, and rice vinegar until smooth and set aside.
- Heat 1 tablespoon of oil in a large skillet over medium-high heat, add chicken, and cook for 5-6 minutes until browned.
- Remove chicken and scramble the beaten eggs in the same pan for 2-3 minutes, then set aside with the chicken.
- Add more oil and sauté diced carrots and minced garlic for 2-3 minutes, then stir in green peas for 1 more minute.
- Increase heat to high and add cold, day-old rice, stir-frying for 3-4 minutes until crisped.
- Return chicken and scrambled eggs to the pan, pour soy sauce over, and cook for an additional minute.
- Pour the Bang Bang sauce over the mixture and stir until well-coated and heated through.
- Garnish with sliced green onions and serve hot.
