Step‑by‑Step Instructions for Baked Tortellini Casserole
  1. Preheat your oven to 375°F (190°C). Gather all your ingredients and equipment, including a large frying pan and a baking dish.
  2. Heat 1 tablespoon of olive oil over medium-high heat. Add ½ cup of chopped onion and 2 minced garlic cloves, sautéing for about 1 to 2 minutes until the onion is translucent.
  3. Mix in 1 pound of lean ground beef, breaking it apart. Cook until the meat is browned (about 5 to 7 minutes) and drain any excess grease.
  4. Stir in 1 cup of sliced cherry tomatoes and cook for an additional minute until softened. Transfer this mixture to a large bowl.
  5. In the same bowl, add 18 ounces of uncooked tortellini and 1 cup of shredded mozzarella cheese. Mix gently until evenly combined.
  6. Pour in the marinara sauce (21-ounce jar) and mix until all ingredients are well coated.
  7. Pour the mixture into a greased baking dish, spread evenly, and top with 1 cup of shredded mozzarella cheese and ¼ cup of grated Parmesan.
  8. Cover the dish with foil and bake for 30 minutes. Uncover and broil for 1 to 2 minutes until the cheese is golden brown.
