- Preheat your oven to 375°F (190°C).
- In a large mixing bowl, combine dark meat chicken pieces with kosher salt, smoked paprika, Montreal chicken seasoning, and softened butter. Add diced red onion, flat-leaf parsley, minced garlic, and red pepper flakes. Pour in chicken stock, fresh lemon juice, grated Parmesan cheese, and heavy whipping cream. Mix until well-coated.
- Transfer marinated chicken to prepared baking dish, spreading evenly. Pour leftover marinade over chicken.
- Bake for about 1 hour and 45 minutes, until internal temperature reaches 165°F (75°C).
- Remove from oven and let it rest for 5 minutes.
