Step-by-Step Instructions for Baked Breakfast Tacos
  1. Preheat your oven to 375°F (190°C).
  2. Cook bacon in a skillet over medium heat until golden brown and crispy, about 7-10 minutes. Transfer to a paper towel-lined plate.
  3. In the same skillet, add canola oil and diced potatoes. Sprinkle in taco seasoning and sauté for 10-12 minutes until golden brown and tender.
  4. In a mixing bowl, beat 8 eggs. Add the cooked bacon back into the skillet with the potatoes and add the eggs. Cook gently until eggs are just set, about 3-4 minutes.
  5. Warm tortillas in the microwave for 20-30 seconds to make them pliable.
  6. Assemble tacos by spooning the egg, bacon, and potato mixture into each tortilla. Sprinkle with shredded cheese, fold, and place seam-side down in a baking dish.
  7. Bake the tacos in the preheated oven for 10-15 minutes until cheese is melted and tortillas are crispy.
