- In a small saucepan, combine apple cider, brown sugar, and granulated sugar. Add cinnamon, nutmeg, and salt. Stir gently until sugars dissolve.
- Place over medium heat until gently simmering, about 3–5 minutes. Stir occasionally.
- Allow to simmer for 8–10 minutes, stirring occasionally, until syrup thickens and coats the back of a spoon.
- Remove from heat and stir in vanilla extract. Taste and adjust spices if needed.
- Cool for 15–20 minutes, then transfer to a glass jar for storage. Can be refrigerated for up to 2 weeks.
